Even when I'm around it, there are still hostile mobs spawning. In the f3-screen you can see the amount of mobs in the mob cap and when I disable mob spawning it says 6-8 (so the zombie villagers don't count). You might have been close enough to the village for the zombie raid to spawn and kill all the villagers, but then you walked far enough away from the village for them to despawn.
